My Grandmother's Russian Pickle Soup (Printable version)

Pickle Soup

Ingredients:
8 cups of water
1 pork roast (about 2 lb)
3 Tbs of dried dill (or more to taste)
2 Cups of spinach leaves/swiss chard leaves
1 Cup of chopped green onions
10-12 roughly peeled Potatoes
three dill pickles, shredded,
1/4 cup of the juice from the pickle jar
Salt to taste, clove of garlic, and 2 tsp. kelp (optional).
Saute roast, searing both sides and then ad water to pot.
Bring to a boil, turn down, and simmer for about an hour.
After about an hour, add the dill, the whole potatoes,
a clove of garlic, kelp, green onions, greens, pickles and juice.
Cook about 40 minutes, until potatoes are cooked.
After the roast is cooked, remove so that it can cool:
cut up into bite-sized pieces.
While the roast is cooling, the potatoes should be done cooking,
so scoop them up and break them up with a fork
Add the bits of meat back to the soup, dish up, and enjoy.

  1. I am intrigued! My family loves my homemade pickles. My husband even drinks the pickle juice right out of the jar-! Does this call for fresh dill? What about the meat--I don't have any pork right now, would beef work?

  2. Rachel, I use dried dill. Fresh would certainly work, as well, but I think the quantity would be greater, wouldn't it? Beef would probably work, but the flavor wouldn't be the same. I've been trying to get the taste of my grandmother's soup for years. I have experimented with it when my uncle comes over, first with chicken, and then with pork, and when I tried the pork, he said: "This is it. Whatever this meat is, it's what Grandma made in her pickle soup." I think I actually used pork neck bones that time, but there are so many bones in them, I now use a pork roast instead. The taste of the pork goes so well with the dill. If your husband drinks the pickle juice, he will definitely LOVE this soup! :)

  7. I just found some roasted pork in my freezer left over from Chirstmas - putting this recipe on my menu for next week!
    I'll be using KAle and Turnips from my still productive garden!
