Easy Chocolate Chip Cookies



My sister whipped up some chocolate chip cookies one day
when I was around to eat them,
and I just had to have the recipe.

It's great to have a great chocolate chip cookie recipe.



Of course,
I wanted to throw in just a touch of something extra for my kids
so I threw in some...


chia seeds!
(1 Tbs. mixed into about 1/2 cup of water).


Yes, I know,
I mentioned chias yesterday,
and I hadn't planned on posting two recipes with chia in them
back to back,
but it just happened that way.

I don't really add chia seeds to everything I make.


Really.


The rest of the ingredients are pretty normal,
except I used half butter/half coconut oil in place of the shortening,...


and I did add just a dab of this:



I ground up about 1/2 oatmeal in my coffee grinder...


and stirred in 1/3 cup plain yogurt,



just until it was moistened,
...like this.

I then dropped it into the dough as it was being mixed up.



It isn't noticeable in the baked cookies;
it just makes me feel like I did something to make my cookies a little healthy.

It's motherhood placebo:
like telling your child not to get wet and cold as he goes out in the rain,
or kissing his cheek before he goes skiing or sledding,
or patting his head before he goes out to ride his bike...

it may be not be effective in it's ability to deter the danger,
but it makes Mom feel like she has done 'something' to help him on his way.



Although optional,
like anything,
it helps to be a little nutty.



This is always the hardest part for me when it comes to chocolate chip cookies:


making them into cookies and not just eating all the dough.





As some would say,
"Delish..."

but my vocabulary tolerance meter must add: "...cious,"

because after all,
"delish" just ain't enough for this cookie.
