Healthy Squash Fritters (or corn)

See here,
it's a herd of snowmen...

I'm working on some things for the up-coming Christmas craft shows.

I know it is way too early for photos of snowmen,
but I just thought I'd show you what's been going on over here
(besides the 31 days of blogging I've been doing about my favorite recipes).

I need to get back to this group and finish painting them up;
so I'm just going to leave you with the pictures and then the recipe card that goes
with the pictures of making Squash Fritters.

Yum:
almost like fair food but at home,
and much healthier

  1. I make something similar to this but with potatoes! My mother in law taught me how to make them, we call them platski's. (I have no idea if that's how you spell that, but it how it sounds. LOL.) Love your snowmen. I'm looking forward to the Christmas season! Where do you get your Coconut oil? Is cooking coconut oil the same as the stuff you can put on your skin? I bought some for making soap and deoderant. I bought it online from a candle/soap making company. I don't know if I can use it for cooking or not. I have been using it as my moisturizer. I love it!
